Greek Seasoning

  • 2 parts oregano
  • 1 1/2 part onion powder
  • 1 1/2 part garlic powder
  • 1 part salt
  • 1 part pepper
  • 1 part dried parsley
  • 1/2 part cinnamon
  • 1/2 part nutmeg

(Part = teaspoon, tablespoon or any other measure that gives you the quantity you want. This is a ratio, not a specific recipe.) In the blends I've seen, oregano is the main ingredient, with onion and garlic powders being almost as much. What I've done here is to leave off the measurements so you can make this by teaspoon or tablespoon or in whatever quantity you want. Also, the proportions should be taken as suggestions, not as a strict formula. There will be good Greek cooks who add or subtract ingredients from this blend. I find that I always expect a slightly lemony flavor to Greek food, so I tend to add a little lemon peel or lemon juice to recipes when I add this.

Store the blend in an air-tight container or extra spice shaker.
