As with all seasonings, the quantities used will vary greatly by the cook and the family make up. I've put these in the order of relative importance for the basic flavor. In other words, you'll want a lot more chili powder, cumin and salt than black pepper. Chili powder is actually used at least double or triple in proportion to the other ingredients, so start with the chili powder and then add in other ingredients. People who want less salt can decrease it and add more of other ingredients like the garlic. If you want it spicier, use more pepper and red pepper. I prefer dried onion flakes, because I like the chunks of onion in the finished product. Have fun and be creative.
