- 1 1/2 cup plain yogurt (I like home-made, but regular unsweetened plain works)
- 1 small cucumber peeled and grated or chopped fine
- 1 tsp ground cumin
- 1/2 tsp minced cilantro
- 2 tsp minced mint
- 1/2 tsp salt
Stir all together and chill. Makes about 2 cups.
Alternatives: add extra cilantro, leave out the mint and cucumber and add 1/2 jalapeno pepper. Or leave the cucumber and add 1/2 jalapeno for a nice mix of spice and cool.
I like to serve this with Potato Pancakes.
