1 1/2 cup plain yogurt (I like home-made, but regular unsweetened plain works)
1 small cucumber peeled and grated or chopped fine
1 tsp ground cumin
1/2 tsp minced cilantro
2 tsp minced mint
1/2 tsp salt
- Stir all together and chill. Makes about 2 cups.
- Alternatives: add extra cilantro, leave out the mint and cucumber and add 1/2 jalapeno pepper. Or leave the cucumber and add 1/2 jalapeno for a nice mix of spice and cool.
- I like to serve this with Potato Pancakes.
